Indian Vegetarian Recipes Along With Raitas.

Vegetable Layered Biryani
Serves: 6
Cooking time: 1 hour
Ingredients

  • Basmati rice (long grain) - 3   cup
  • Green cardamom-   3 to 4  
  • Cloves -   3 to 4  
  • Cinnamon sticks - 2  
  • Black pepper-    8 to 10  
  • Bay leaves-   2 to3  
  • Lime juice-    2   teaspoon
  • Salt to taste
  • Ghee- 6   tablespoon
  • Water- 4   cup
  • Carrot chopped to small square pieces- 2  
  • Cauliflower florets- 1   cup
  • Green peas-1   cup
  • Potato (cut to finger chips/french fries)- 1  
  • Onion chopped to thin slices-2  
  • Cashews -10-15  
  • Raisins- 15-20  
  • Sugar-1   tablespoon
  • Garlic cloves - 8-9  
  • Ginger grated- 1/2  
  • Green chilli- 3-4  
  • Coriander leaves- 3   tablespoon
  • Fresh grated coconut- 2   tablespoon
  • Red chilli powder- 1/2  
  • Turmeric powder- 1   teaspoon
  • Coriander- 2   teaspoon
  • Cumin powder- 2   teaspoon
  • Garam masala- 1/2  
  • Tomatoes- 2  

Preparation

  1. First cut the vegetables and keep it aside.
  2. Make a paste of all the masala .Put chopped onions (2),garlic cloves(8 to 9), grated ginger (0.5), green chilli(3 to 4), coriander leaves (3 tablespoons),fresh grated coconut(2 tablespoons),red chilli powder(0.5 tablespoon), turmeric powder(1 teaspoon), coriander(2 tea spoon),Cumin powder(2 tea spoon), garam masala(0.5 teaspoon) and chopped tomato (2 medium) and grind all the ingredients in the mixer.
  3. Then wash the rice thoroughly and soak it for about 15 minutes. 
  4. Now add lime juice, salt, ghee( 1 teaspoon) ,cloves , bay leaves ,black pepper ,green cardamom to the soaked rice .
  5. After that add 4 cups of boiled water and keep it for cooking in rice cooker. It takes 10 to 12 minutes to get rice cooked.
  6. Separate rice grains with spatula/ fork once rice has cooled.
  7. Now fry the potato finger chips/french fries and onion slice till they get crispy. 
  8. You can even fry cashews and raisins till it is golden brown colour.
  9. Now you need to half boil all vegetables with salt to it.
  10. Roast masala in a pan for 4 to 5 minutes and add boiled vegetables and roast for 3 to 4 minutes.
  11. In a large bowl, you need to put some cashews and raisins at the bottom. Add layer of rice on it and then add layer of vegetable on rice , again give layer of rice . Again add vegetable layer then add rice layer.
  12. On top of it spread finger chips, fried sliced onion, cashews and raisins.
  13. You should enjoy this delicious biryani with raita . Note while serving put the spoon all the way to the bottom to get all the layers.

Cucumber Raita Recipe
Serves: 2-3
Ingredients

  • 1 medium sized cucumber or 1 cup finely chopped cucumber
  • 1 cup fresh curd/dahi/yogurt
  • ½ tsp red chilli powder/lal mirch powder, optional
  • 1 tsp roasted cumin powder/bhuna jeera powder
  • ½ tsp chaat masala powder
  • salt as required or can use rock salt, black salt or regular salt
  • 1 tbsp chopped coriander leaves or ½ tbsp chopped mint leaves

Preparation

  1. Rinse the cucumber and then peel the cucumber and finely chop it. You can also grate the cucumber if you like.
  2. In a bowl, beat the curd till smooth.
  3. Now add the grated cucumber to the curd.
  4. You need to add all the dry spice powders, rock salt or black salt and coriander leaves.
  5. Mix well and serve cucumber raita.
  6. You could even garnish the cucumber raita with some coriander leaves or mint leaves.

Onion tomato raita recipe
Serves: 2-3
Ingredients

  • 1 cup curd/dahi/yogurt - dairy or vegan
  • 1 small to medium sized onion, finely chopped
  • 1 small to medium sized tomato, finely chopped
  • 1 green chilli finely chopped
  • 2 to 3 tsp chopped mint leaves (pudina patta) or coriander leaves or a mix of both
  • â…› tsp of red chilli powder (lal mirch powder)
  • 1 tsp roasted cumin powder (bhuna jeera powder)
  • salt as required
  • few mint leaves or coriander leaves for garnishing (optional)

Preparation

  1. First rinse the onion, tomatoes, mint leaves and green chilli.
  2. Then finely chop them.
  3. Now whisk the curd and make a smooth paste.
  4. Add the finely chopped onion, tomato, mint leaves and green chilli in the curd.
  5. Add cumin powder, red chilli powder and salt. Mix very well.
  6. Serve the onion tomato raita. if you want you can also garnish the onion tomato raita with mint or coriander leaves and serve with pulao, biryani.
